Mah Lai Koh ~ Steamed Cake (马来糕)

Have not been making this cake for quite a while... DH missed it and I made it last night. Original recipe from Agnes Change Delightful Snacks & Dim Sum Cook Book. I modified the recipe, used plain flour instead of two types of flour that call for, replace peanut oil instead of lard (bcos I couldn't find it here and most important health concern), reduced the amount of sugar too and result of this cake is very good. I have been using this recipe for all time. Super easy recipe... Enjoy ya!

Make 2 (18.5 by 12.5 by 5 cm) Aluminum Tray or 1 (9-inch / 22 cm) round tin

Ingredients:

  • 1-3/4 cup Plain Flour
  • 1 tbsp Custard Powder
  • 1-1/2 tbsp Baking Powder
  • 3/4 cup + 2 tbsp Sugar
  • 60g Butter, Melted
  • 60ml Peanut Oil (Can be replace by Melted Butter too)
  • 1 tsp Vanilla Essence
  • 180ml Milk
  • 3 Large Eggs

Method:

  1. Sift flour, custard powder and baking powder into a large mixing bowl. Add in sugar and mix well.
  2. Add melted butter, peanut oil, vanilla essence and milk, mix till well-combimed.
  3. Lastly add in egg, one at a time. Keep stirring till a smooth sticky batter.
  4. Pour into lightly greased tin/tray and steamed over high heat for 30 mins till cooked.
  5. Cool completely before cutting.

Fonia, I have been looking around for this recipe for quite a while. From the ingredients, seems like its quite easy to make. Don't have custard powder so can I omit & how it looks & taste like without custard powder. Tks

Xinying, Welcome ya! I'm sori for the late reply! (Anyone correct me if I'm wrong) As known custard powder is a form of thinkener with sweet aroma and yellow colouring added. Mayb you can replace it by corn flour... HTHs!
