Actually these cupcakes were made on the 12 Feb'06. Oh No!!! abt 1 week ago!??? What took me so long to post it???) Hmmm... Busy? Lazy? or Not in the mood? *Scratching head with a innocent look* Well... anyway here's the post of the cupcakes.
Ingredients:
160 g Butter, softened
3/4 cup Sugar
3 Eggs, lightly beaten
1 tsp Vanilla Essence
3/4 cup Desiccated Coconut
1/2 cup Sultana
2 cup Self-raising Flour, sifted
1/2 cup Milk
Method:
Preheat oven to 350 °F (180 °C). Beat butter and sugar with a electric beater until light and creamy. Add eggs gradually, beat well after each addition. Add in vanilla essence; beat untill well-combined.
Add desiccated coconut and sultana; mix well.
Fold in sifted flour alternately with milk. Stir until just combined and mixture is almot smooth.
Spoon mixture into the prepared paper cups. Bake cupcakes for 30 minutes or until skewer comes out clean when insterted into the centre. Leave cupcakes in the tin for 10 mintues before turn onto wire rack to cool.

I tried this as have no bread for breakfast. Turn out very good tasty and moist.
I made 12 using patty tins tray and put alot batter as I think if too small size will come out dry.
N got another small round one. tq
