Yogurt Cheese Loaf

To clean the yogurt and grated cheddar cheese in my fridge... I made this yogurt cheese loaf! *Big Grin*

Makes 2 loafs (7 by 3-inch loaf tin)

Ingredient:

  • 230 g Butter, rm temp
  • 1 cup Sugar
  • 4 Large Eggs, lightly beaten
  • 200 g Cheddar Cheese, grated or shredded
  • 1/2 cup Plain Yogurt
  • 1/4 cup Milk
  • 21/2 cup Plain Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt

Method:

  1. Preheat oven to 180 °C. Lightly grease loaf tins with melted butter. Set aside.
  2. Sift flour, baking powder, baking soda and salt into a large bowl. Set aside.
  3. Mix the yogurt and milk, until well-combined. Set aside.
  4. In the mixing bowl, cream the butter and sugar until light and creamy. Add eggs gradually, beating well after each addition.
  5. Add in the grated / shredded cheddar cheese, mix well. Fold in sifted flour mixture alternately with yogurt mixture. Stir until smooth.
  6. Spoon into the prepared tins and bake for 45 mins or until test is done. Let cakes rest in tin for 5 mintues before turning out to cool completely on wire rack.

Fonia, this looks moist and yummy. I have read through the steps and I think it shouldn't be a problem for a novice baker like me. Will try one of these days, that is if I remember. Haha... because I have so many recipes lining up, waiting for me to try. Anyway, thanks for sharing! :)
