Chocolate Chip Cookies
*Blushing*... Another lovely recipe from Leelee. Kaisu me, double-up the ingredients. Half for Chocolate chips with Walnuts and the other half for Chopped Almond. I would said these cookies are light and crunchy... So shiok! I really couldn’t help myself and wolfed down five while they were cooling on rack.

Ingredients:
- 125 g Soft Butter
- 75 g Caster Sugar
- 60 ml Demerara Sugar (can substitue with brown sugar)
- 1 Egg
- 1/2 tsp Vanilla Essence
- 150 g Plain Flour
- 45 g or (3 tbsp) Corn Flour
- 1/2 tsp Bicarbonate Soda
- Pinch of Salt
- 60 g Chopped Walnut or Pecan nuts (toasted first)
- 125 g Chocolate Chips
Method:
- Cream butter with both sugar until creamy. Beat in egg and vanilla essence. Sift flour, cornflour, bicarbonate soda and salt together.
- Add to creamed butter mixture and mix to a soft dough. Stir in nuts and chocolate chips.
- Spoon mixture onto a well greased baking tray leaving room for the cookies to expand. Bake at 180c for 15 mins. Carefully remove to wire rack to cool.
